Shrimp Cocktail Cups are a delightful appetizer featuring shrimp served in individual cups with cocktail sauce.
Ingredients

- 1 pound shrimp, peeled and deveined
- 1 cup cocktail sauce
- 1 tablespoon lemon juice
- 1 tablespoon chopped parsley
- 1 avocado, diced
- 12 small cups or shot glasses
Instructions
- Boil the shrimp in salted water until pink and cooked, about 2-3 minutes.
- Drain and cool the shrimp under cold water.
- In a bowl, mix cocktail sauce with lemon juice.
- In each cup, layer diced avocado and shrimp.
- Top with cocktail sauce and sprinkle with parsley.
- Serve immediately or chill until ready to serve.
