Ingredients

- 1 lb shrimp, peeled and deveined
- 2 avocados, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/4 cup cilantro, chopped
- 2 limes, juiced
- Salt to taste
- Pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Add shrimp, season with salt and pepper, and cook until pink.
- In a bowl, combine diced avocados, cherry tomatoes, red onion, and cilantro.
- Add lime juice to the mixture and stir gently.
- Once shrimp is cooked, add it to the bowl and mix.
- Serve immediately in bowls.
Notes
- Adjust seasoning to your taste.
- Serve with tortilla chips for a crunch.
- Can be stored in the fridge for up to 2 days.
