Ingredients

- 4 chicken breasts
- 2 zucchinis, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine chicken, zucchini, bell peppers, onion, and garlic.
- Drizzle with olive oil and season with oregano, thyme, salt, and pepper.
- Toss to coat evenly.
- Spread the mixture on a sheet pan in a single layer.
- Bake for 25-30 minutes or until chicken is cooked through.
- Serve hot.
