Description

A simple and delicious sheet pan meal featuring cashew chicken and vegetables.


Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup cashews
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix soy sauce, honey, olive oil, garlic powder, ginger powder, salt, and pepper.
  3. Add chicken and vegetables to the bowl and mix well.
  4. Spread the mixture evenly on a sheet pan.
