Ingredients

- 4 boneless, skinless chicken breasts
- 2 cups broccoli florets
- 2 cups bell peppers, sliced
- 1 cup cherry tomatoes
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix balsamic vinegar, olive oil, garlic powder, salt, and pepper.
- Add chicken and veggies to the bowl and toss to coat.
- Spread the chicken and veggies on a sheet pan.
- Bake for 25-30 minutes or until chicken is cooked through.
- Serve warm.
Notes
- Adjust vegetables based on your preference.
- Marinate chicken for an hour for more flavor.
- Leftovers can be stored in the refrigerator for up to 3 days.
