- 4 chicken thighs
- 1 cup rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon paprika
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken thighs with salt, pepper, and paprika.
- Brown the chicken on both sides, then remove from the skillet.
- Add onions, garlic, and bell pepper to the skillet. Sauté until softened.
- Add rice, chicken broth, and thyme. Stir well.
- Place chicken back in the skillet, cover, and simmer for 30 minutes.
- Serve hot and enjoy.
