A hearty dish of sausage, sauerkraut, and potatoes.
Ingredients

- 1 lb sausage
- 2 cups sauerkraut
- 4 medium potatoes, diced
- 1 onion, chopped
- 2 cups chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and sausage, cooking until browned.
- Add potatoes and stir for 2 minutes.
- Pour in chicken broth and bring to a boil.
- Add sauerkraut and reduce heat to simmer.
- Cover and cook for 30 minutes or until potatoes are tender.
- Season with salt and pepper before serving.
Notes
- This dish can be made with different types of sausage.
- Feel free to add carrots or other vegetables.
- Leftovers can be stored in the fridge for up to 3 days.
