- 12 oz rigatoni pasta
- 1 lb Italian sausage
- 3 cups fresh spinach
- 1 can diced tomatoes (14 oz)
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook rigatoni according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and garlic. Sauté until onion is translucent.
- Add sausage to the skillet. Cook until browned.
- Stir in diced tomatoes and spinach. Cook until spinach wilts.
- Add the cooked rigatoni to the skillet. Mix well.
- Sprinkle with Parmesan cheese. Stir until melted.
- Season with salt and pepper. Serve hot.
