Description

Ingredients

  • 12 oz rigatoni pasta
  • 1 lb Italian sausage
  • 3 cups fresh spinach
  • 1 can diced tomatoes (14 oz)
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook rigatoni according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add chopped onion and garlic. Sauté until onion is translucent.
  4. Add sausage to the skillet. Cook until browned.
