Description

Salted Caramel Pumpkin Cheesecake Bars are a creamy and decadent dessert that combines the rich flavors of pumpkin and cream cheese with a delightful salted caramel drizzle, perfect for autumn gatherings.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 cup cream cheese, softened
  • 1 cup pumpkin puree
  • ½ cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • ½ cup salted caramel sauce
  • Flaky sea salt, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar until it resembles wet sand. Press into the bottom of an 8×8 inch baking dish.
  3. Bake the crust for 8-10 minutes until light golden, then let it cool slightly.
  4. In a large mixing bowl, beat softened cream cheese until smooth. Add pumpkin puree, powdered sugar, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until fully combined and smooth.
  5. Pour the pumpkin cheesecake filling over the cooled crust and drizzle half of the salted caramel sauce on top, swirling gently with a knife.
  6. Bake for 25-30 minutes until the edges are set but the center has a slight jiggle. Let cool at room temperature for about an hour.
  7. Refrigerate for at least 2 hours until completely set. Cut into squares and drizzle with remaining salted caramel sauce and sprinkle with flaky sea salt before serving.
