- 1 lb chicken breast
- 2 cups cooked rice
- 1 cup salsa verde
- 1 cup chicken broth
- 1 cup black beans, drained
- 1 cup corn
- 1 tsp cumin
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F.
- In a baking dish, combine chicken, salsa verde, chicken broth, black beans, corn, and cumin.
- Season with salt.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for an additional 10 minutes.
- Serve over cooked rice and garnish with cilantro.
Notes
- Use rotisserie chicken for quicker preparation.
- Adjust spice level with hot salsa verde if desired.
