- 8 ounces pasta
- 2 cups mixed vegetables (bell peppers, zucchini, carrots)
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Cook the pasta according to package instructions.
- Toss the mixed vegetables with olive oil, garlic powder, Italian seasoning, salt, and pepper.
- Spread the vegetables on a baking sheet and roast for 20 minutes.
- Combine the cooked pasta with the roasted vegetables.
- Serve with grated Parmesan cheese on top.
