Description

Roasted Sweet Potato Carrot Soup is a comforting dish that combines the natural sweetness of sweet potatoes and carrots, enhanced by a creamy texture from coconut milk, making it perfect for chilly days.


Ingredients

  • 2 medium sweet potatoes (about 500g), peeled and diced
  • 3 medium carrots (about 300g), peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups (1 liter) vegetable broth
  • 1 cup (240ml) coconut milk
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Wash and peel the sweet potatoes and carrots, then dice them into small, even pieces. Chop the onion and mince the garlic.
  2. Drizzle olive oil over the vegetables, sprinkle with salt and pepper, and toss to coat.
  3. Preheat the oven to 400°F (200°C) and spread the vegetable mixture on a baking sheet. Roast for 25-30 minutes, stirring halfway through.
  4. In a large pot, heat more olive oil and sauté the minced garlic until fragrant. Add the roasted vegetables and vegetable broth, bringing to a gentle simmer.
  5. Blend the soup until smooth using an immersion blender or a countertop blender.
  6. Stir in the coconut milk and heat gently. Adjust seasoning with salt and pepper as needed.
  7. Serve warm, optionally drizzling more coconut milk on top and garnishing with fresh herbs or paprika.
