- 3 medium carrots (about 300g), peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups (1 liter) vegetable broth
- 1 cup (240ml) coconut milk
- 2 tablespoons olive oil
- Salt, to taste

Instructions
- Wash and peel the sweet potatoes and carrots, then dice them into small, even pieces. Chop the onion and mince the garlic.
- Drizzle olive oil over the vegetables, sprinkle with salt and pepper, and toss to coat.
- Preheat the oven to 400°F (200°C) and spread the vegetable mixture on a baking sheet. Roast for 25-30 minutes, stirring halfway through.
- In a large pot, heat more olive oil and sauté the minced garlic until fragrant. Add the roasted vegetables and vegetable broth, bringing to a gentle simmer.
- Blend the soup until smooth using an immersion blender or a countertop blender.
- Stir in the coconut milk and heat gently. Adjust seasoning with salt and pepper as needed.
- Serve warm, optionally drizzling more coconut milk on top and garnishing with fresh herbs or paprika.
