Description

Roasted Garlic Herb Butter Pasta is a delightful dish that combines the rich taste of roasted garlic with fresh herbs and creamy butter, creating a mouthwatering experience.


Ingredients

  • 300 grams (10.5 oz) spaghetti or your choice of pasta
  • 6 cloves garlic, whole
  • 100 grams (3.5 oz) unsalted butter
  • 1/4 cup (60 ml) extra virgin olive oil
  • 1/2 cup (15 grams) fresh parsley, finely chopped
  • 1/4 cup (10 grams) fresh basil, finely chopped
  • 1/4 cup (20 grams) grated Parmesan cheese, plus more for serving
  • Salt – to taste
  • Black pepper – to taste
  • Optional: Red pepper flakes – a pinch for heat

Instructions

  1. Preheat your oven to 400°F (200°C). Place whole garlic cloves on aluminum foil, drizzle with olive oil, wrap tightly, and roast for 20-25 minutes until soft and golden.
  2. While the garlic is roasting, bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta cooking water before draining.
  3. In a large skillet, melt the unsalted butter over medium heat, then add the remaining olive oil. Add the roasted garlic and mash slightly, cooking for 2-3 minutes until fragrant.
  4. Add the cooked pasta to the skillet and toss to coat. If needed, add reserved pasta water to achieve desired consistency.
  5. Stir in chopped parsley, basil, and grated Parmesan cheese. Season with salt, black pepper, and optional red pepper flakes. Serve warm with additional Parmesan on top.
