- 6 cloves garlic, whole
- 100 grams (3.5 oz) unsalted butter
- 1/4 cup (60 ml) extra virgin olive oil
- 1/2 cup (15 grams) fresh parsley, finely chopped
- 1/4 cup (10 grams) fresh basil, finely chopped
- 1/4 cup (20 grams) grated Parmesan cheese, plus more for serving
- Salt – to taste
- Black pepper – to taste
- Optional: Red pepper flakes – a pinch for heat
Instructions
- Preheat your oven to 400°F (200°C). Place whole garlic cloves on aluminum foil, drizzle with olive oil, wrap tightly, and roast for 20-25 minutes until soft and golden.
- While the garlic is roasting, bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta cooking water before draining.
- In a large skillet, melt the unsalted butter over medium heat, then add the remaining olive oil. Add the roasted garlic and mash slightly, cooking for 2-3 minutes until fragrant.
- Add the cooked pasta to the skillet and toss to coat. If needed, add reserved pasta water to achieve desired consistency.
- Stir in chopped parsley, basil, and grated Parmesan cheese. Season with salt, black pepper, and optional red pepper flakes. Serve warm with additional Parmesan on top.
