A delicious roasted garlic chicken with seasonal vegetables.
Ingredients

- 4 chicken thighs
- 1 head of garlic
- 2 cups of mixed vegetables (carrots, bell peppers, zucchini)
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- 1 teaspoon dried thyme
Instructions
- Preheat your oven to 400°F (200°C).
- Peel the outer layers of the garlic head, leaving the skins on the individual cloves.
- In a bowl, mix olive oil, salt, pepper, and thyme.
- Coat the chicken thighs in the olive oil mixture.
- Place the chicken and vegetables on a baking sheet.
- Scatter the garlic cloves around the chicken and vegetables.
- Roast in the oven for 35-40 minutes, until the chicken is cooked through.
- Let it rest for 5 minutes before serving.
