Description

Ingredients

  • 4 chicken thighs
  • 1 head of garlic
  • 2 cups of mixed vegetables (carrots, bell peppers, zucchini)
  • 2 tablespoons olive oil

  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the outer layers of the garlic head, leaving the skins on the individual cloves.
  3. In a bowl, mix olive oil, salt, pepper, and thyme.
  4. Coat the chicken thighs in the olive oil mixture.
  5. Place the chicken and vegetables on a baking sheet.
  6. Scatter the garlic cloves around the chicken and vegetables.
  7. Roast in the oven for 35-40 minutes, until the chicken is cooked through.
  8. Let it rest for 5 minutes before serving.
