Ingredients

- 3 medium beets, roasted and sliced
- 4 cups mixed greens
- 1/2 cup goat cheese, crumbled
- 1/4 cup walnuts, chopped
- 2 tablespoons balsamic vinaigrette
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wrap the beets in aluminum foil and roast for 45-60 minutes until tender.
- Let the beets cool, then peel and slice them.
- In a large bowl, combine mixed greens, sliced beets, goat cheese, and walnuts.
- Drizzle with balsamic vinaigrette.
- Season with salt and pepper.
- Toss gently to mix.
