Ingredients

- 1 cup cooked rice
- 1/2 cup black beans
- 1/2 cup corn
- 1/2 cup diced bell peppers
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- Cook rice according to package instructions.
- In a bowl, combine black beans, corn, bell peppers, tomatoes, and red onion.
- Add cooked rice to the mixture.
- Toss in lime juice, salt, and pepper.
- Top with avocado slices and chopped cilantro.
- Serve immediately.
