- 1/4 cup sugar

Instructions
- Preheat your oven to 375°F (190°C).
- Roll out the puff pastry on a floured surface.
- In a bowl, mix rhubarb, cream cheese, sugar, and vanilla.
- Cut the puff pastry into squares.
- Place a spoonful of the rhubarb mixture on each square.
- Fold the pastry over to create a triangle and seal the edges.
- Brush the tops with beaten egg.
- Bake for 20-25 minutes or until golden brown.
- Allow to cool slightly before serving.
