Red lentil dahl is a flavorful and nutritious dish made with red lentils, spices, and vegetables.
Ingredients

- 1 cup red lentils
- 4 cups water
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon salt
- 1 tablespoon oil
- 1 can coconut milk (optional)
- Fresh cilantro for garnish
Instructions
- Rinse the red lentils under cold water.
- In a pot, heat oil over medium heat.
- Add chopped onion, garlic, and ginger. Sauté until softened.
- Add turmeric, cumin, coriander, and salt. Stir for 1 minute.
- Add rinsed lentils and water. Bring to a boil.
- Reduce heat and simmer for 20-25 minutes until lentils are soft.
- If using, stir in coconut milk and heat through.
- Garnish with fresh cilantro before serving.
Notes
- Serve with rice or naan.
- Adjust spices to your taste.
- Store leftovers in the fridge for up to 3 days.
