Description

A delicious twist on the classic tiramisu using raspberries.


Ingredients

Scale
  • 2 cups fresh raspberries
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup strong coffee, cooled
  • 24 ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. In a bowl, mix mascarpone cheese, sugar, and vanilla extract.
  2. In another bowl, whip heavy cream until stiff peaks form.
  3. Gently fold whipped cream into the mascarpone mixture.
  4. Dip ladyfingers in coffee quickly, then layer them in a dish.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Add half of the raspberries on top.
  7. Repeat the layers with remaining ladyfingers, mascarpone mixture, and raspberries.
  8. Chill for at least 4 hours or overnight.
  9. Dust with cocoa powder before serving.

Notes

  • Use fresh raspberries for best flavor.
  • You can substitute coffee with raspberry juice for a different flavor.
  • Make sure the ladyfingers are not soaked too long.
