Description

Delicious raspberry oatmeal crumble bars with a sweet and tart filling.


Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 cups fresh raspberries
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix oats, flour, brown sugar, granulated sugar, salt, and baking powder.
  3. Pour melted butter into the mixture and stir until crumbly.
  4. Press half of the mixture into a greased baking pan.
  5. In another bowl, combine raspberries and lemon juice.
  6. Spread raspberry mixture over the pressed oat layer.
  7. Sprinkle the remaining oat mixture on top of the raspberries.
  8. Bake for 25-30 minutes until golden brown.
  9. Let cool before cutting into bars.

Notes

  • Store bars in an airtight container.
  • Use frozen raspberries if fresh ones are unavailable.
