- 2 cups cooked chicken, shredded
- 8 large eggs
- 1 cup milk
- 1 packet ranch seasoning
- 2 cups shredded cheddar cheese
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup diced tomatoes
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together eggs, milk, and ranch seasoning.
- Add shredded chicken, bell peppers, onions, and tomatoes to the egg mixture.
- Stir in half of the cheddar cheese.
- Pour the mixture into a greased baking dish.
- Top with remaining cheddar cheese.
- Bake for 30-35 minutes or until set and golden.
- Let cool for a few minutes before serving.

- This can be made ahead and stored in the refrigerator.
