Description

A colorful and nutritious salad featuring rainbow carrots and a sesame dressing.


Ingredients

  • 2 cups rainbow carrots, grated
  • 1 cup red cabbage, shredded
  • 1/2 cup green onions, chopped
  • 1/4 cup sesame seeds
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • Salt to taste

Instructions

  1. Grate the rainbow carrots and shred the red cabbage.
  2. Chop the green onions.
  3. In a bowl, mix rice vinegar, soy sauce, sesame oil, honey, and salt.
  4. Add the grated carrots, cabbage, green onions, and sesame seeds to the bowl.
  5. Toss everything until well coated with the dressing.
  6. Chill for 15 minutes before serving.

Notes

  • This salad is best served cold.
  • Feel free to add other vegetables like bell peppers.
  • Adjust the sweetness by adding more or less honey.
