A healthy and colorful quinoa veggie stir-fry packed with nutrients.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup broccoli florets
- 1 carrot, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, bring water to a boil. Add quinoa and reduce heat to low.
- Cover and simmer for 15 minutes or until water is absorbed.
- In a large skillet, heat olive oil over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Add diced bell peppers, broccoli, and carrot. Cook for 5-7 minutes.
- Stir in cooked quinoa and soy sauce.
- Mix well and cook for an additional 2 minutes.
- Season with salt and pepper.
- Serve warm.
Notes
- You can add any vegetables you prefer.
- Use low-sodium soy sauce for a healthier option.
