Description

Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring water to a boil. Add quinoa and reduce heat to low.
  3. Cover and simmer for 15 minutes or until water is absorbed.
  4. In a large skillet, heat olive oil over medium heat.
  5. Add garlic and ginger, sauté for 1 minute.
  6. Add diced bell peppers, broccoli, and carrot. Cook for 5-7 minutes.
  7. Stir in cooked quinoa and soy sauce.
  8. Mix well and cook for an additional 2 minutes.
  9. Season with salt and pepper.
  10. Serve warm.

Notes

  • You can add any vegetables you prefer.
  • Use low-sodium soy sauce for a healthier option.
