Ingredients

- 1 cup quinoa
- 2 cups water
- 1 pound chicken breast, diced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 cup black beans, cooked
- 1 cup corn, cooked
- 1 cup diced tomatoes
- 1 avocado, sliced
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add diced chicken and season with cumin, chili powder, garlic powder, salt, and pepper.
- Cook chicken until it is no longer pink.
- In a bowl, combine cooked quinoa, chicken, black beans, corn, and tomatoes.
- Squeeze lime juice over the mixture and stir.
- Top with avocado slices before serving.
Notes
- Adjust spices to your taste.
- Can add cheese or sour cream as toppings.
- Store leftovers in an airtight container in the fridge.
