Description

A healthy and delicious quinoa chicken burrito bowl packed with flavors.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 cup black beans, cooked
  • 1 cup corn, cooked
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add diced chicken and season with cumin, chili powder, garlic powder, salt, and pepper.
  6. Cook chicken until it is no longer pink.
  7. In a bowl, combine cooked quinoa, chicken, black beans, corn, and tomatoes.
  8. Squeeze lime juice over the mixture and stir.
  9. Top with avocado slices before serving.
