Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1 lime, juiced
  • Salt to taste
  • Pepper to taste
  • Cilantro for garnish

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a bowl, combine black beans, avocado, cherry tomatoes, and red onion.
  6. Add lime juice, salt, and pepper to the mixture.
  7. Serve quinoa topped with the black bean mixture.
  8. Garnish with cilantro before serving.
