- 1 cup quinoa
- 2 cups water
- 1 can black beans, drained and rinsed
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1 lime, juiced
- Salt to taste
- Pepper to taste
- Cilantro for garnish
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Fluff quinoa with a fork and let it cool.
- In a bowl, combine black beans, avocado, cherry tomatoes, and red onion.
- Add lime juice, salt, and pepper to the mixture.
- Serve quinoa topped with the black bean mixture.
- Garnish with cilantro before serving.
