Ingredients

  • Pumpkin Puree: 1 cup
  • All-Purpose Flour: 2 cups
  • Brown Sugar: 1 cup
  • Baking Soda: 1 teaspoon
  • Pumpkin Spice: 2 teaspoons
  • Eggs: 2 large
  • Vanilla Extract: 1 teaspoon
  • Butter: 1/2 cup softened
  • Chopped Nuts: Optional
  • Chocolate Chips: Optional
  • Cinnamon or Nutmeg: Optional
  • Maple Syrup: Optional

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter and brown sugar until light and fluffy. Add pumpkin puree, eggs, and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together flour, baking soda, pumpkin spice, and salt. Gradually add to the pumpkin mixture, stirring gently until just combined.
  4. Drop rounded tablespoons of batter onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 12-15 minutes until edges are set.
  5. Let the cakes cool on the sheets for a few minutes before transferring to wire racks to cool completely.
  6. For the filling, beat softened cream cheese until smooth, then gradually add powdered sugar until fluffy.
  7. Spread cream cheese filling on the flat side of one cake and top with another cake to create a sandwich. Repeat with remaining cakes.
