Ingredients

Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the softened butter and brown sugar until light and fluffy. Add pumpkin puree, eggs, and vanilla extract, mixing until well combined.

- Let the cakes cool on the sheets for a few minutes before transferring to wire racks to cool completely.
- For the filling, beat softened cream cheese until smooth, then gradually add powdered sugar until fluffy.
- Spread cream cheese filling on the flat side of one cake and top with another cake to create a sandwich. Repeat with remaining cakes.
