- 1 cup pumpkin puree
- 2 cups sharp cheddar cheese
- 1 cup heavy cream
- 1 teaspoon garlic powder
- 1/2 teaspoon nutmeg
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 cup breadcrumbs
- 2 tablespoons butter
- Optional: Fresh parsley for garnish
Instructions
- Cook the elbow macaroni in salted boiling water until al dente, about 7-9 minutes, then drain.
- In a large mixing bowl, combine pumpkin puree and heavy cream, whisking until smooth. Add garlic powder, nutmeg, black pepper, and salt, mixing well. Stir in shredded sharp cheddar cheese, reserving some for later.
- Pour the cheese sauce over the cooked macaroni and stir gently to coat.
- Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
- Preheat the oven to 350°F (175°C). Mix breadcrumbs with melted butter and sprinkle over the macaroni. Add reserved cheddar cheese on top. Bake for 25-30 minutes until golden brown and crispy.
