- 1 cup pumpkin puree
- 8 oz cream cheese (softened)
- 1/2 cup unsalted butter (melted)
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup all-purpose flour
- 1 teaspoon pumpkin spice
- 1/4 teaspoon salt
- Additional powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish by greasing it or lining it with parchment paper.
- In a medium bowl, combine melted butter, 1 cup of powdered sugar, and 1 cup of all-purpose flour. Mix until well combined and press into the bottom of the prepared baking dish.
- In a large mixing bowl, beat the softened cream cheese until smooth. Add pumpkin puree, remaining powdered sugar, vanilla extract, and pumpkin spice. Mix until well combined, then add eggs one at a time, mixing well after each addition. Finally, add salt and mix until smooth.
- Pour the pumpkin filling over the crust in the baking dish and spread it evenly. Bake for 30-35 minutes until the edges are set and the center is slightly jiggly.
- Let the bars cool in the pan for at least 30 minutes, then refrigerate for 1-2 hours before serving. Dust with powdered sugar if desired, cut into squares, and enjoy!
Notes
- Use pure pumpkin puree, not pumpkin pie filling.
- Store leftovers in an airtight container in the refrigerator for up to a week.
- For gluten-free bars, substitute all-purpose flour with a gluten-free flour blend.
