Description

Pumpkin Gooey Butter Bars are a delightful dessert that combines the rich flavors of pumpkin and cream cheese, featuring a creamy, gooey filling and a buttery crust.

  • 1 cup pumpkin puree
  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (melted)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon pumpkin spice
  • 1/4 teaspoon salt
  • Additional powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish by greasing it or lining it with parchment paper.
  2. In a medium bowl, combine melted butter, 1 cup of powdered sugar, and 1 cup of all-purpose flour. Mix until well combined and press into the bottom of the prepared baking dish.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Add pumpkin puree, remaining powdered sugar, vanilla extract, and pumpkin spice. Mix until well combined, then add eggs one at a time, mixing well after each addition. Finally, add salt and mix until smooth.
  4. Pour the pumpkin filling over the crust in the baking dish and spread it evenly. Bake for 30-35 minutes until the edges are set and the center is slightly jiggly.
  5. Let the bars cool in the pan for at least 30 minutes, then refrigerate for 1-2 hours before serving. Dust with powdered sugar if desired, cut into squares, and enjoy!
