Ingredients

  • 1 can (15 oz) pumpkin puree
  • 2 cups milk
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the oats, pumpkin puree, milk, brown sugar, maple syrup, vanilla, baking powder, cinnamon, nutmeg, and salt.
  3. If using, fold in the nuts.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 30-35 minutes until set and golden.
  6. Let cool for a few minutes before serving.
