- 4 medium potatoes, diced
- 1 pound sausage, sliced
- 1 onion, chopped
- 1 bell pepper, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sausage and cook until browned.
- Remove sausage and set aside.
- Add potatoes, onion, and bell pepper to the skillet.
- Season with salt and pepper.
- Cook until potatoes are tender, about 15-20 minutes.
- Add sausage back to the skillet and stir to combine.
- Cook for another 5 minutes.
- Serve hot.
