Crispy polenta fries that are gluten free and perfect as a snack or side dish.
Ingredients

- 2 cups polenta
- 4 cups water
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Boil water and salt in a pot.
- Slowly add polenta, stirring constantly.
- Cook for 15 minutes until thick, stirring continuously.
- Stir in olive oil, garlic powder, paprika, and cheese.
- Spread polenta in a greased baking dish and refrigerate for at least 2 hours.
- Preheat oven to 425°F (220°C).
- Cut polenta into fry shapes.
- Place fries on a baking sheet and bake for 25-30 minutes, flipping halfway, until golden and crispy.
Notes
- Use parchment paper for easier cleanup.
- Store leftovers in the refrigerator for up to 3 days.
- Reheat in the oven for best texture.
