Description

A quick and healthy stir fry with chicken and vegetables.


Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups mixed bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and ginger, and sauté for 1 minute.
  3. Add sliced chicken and cook until browned.
  4. Add bell peppers, broccoli, and carrots.
  5. Pour in soy sauce, and stir well.
  6. Cook until vegetables are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot.
