Description
A refreshing and hearty pasta salad with pecans and cranberries.
Ingredients

- 8 oz pasta
- 1 cup cranberries
- 1 cup pecans, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, diced
- 1/4 cup parsley, chopped
- 1/3 cup olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and cool.
- In a large bowl, combine pasta, cranberries, pecans, feta, onion, and parsley.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Chill for at least 30 minutes before serving.
Notes
- Adjust the amount of cranberries based on your taste.
- Store leftovers in the refrigerator for up to 3 days.
