- 1 lb chicken fillet, diced
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon lime juice
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a pan over medium heat.
- Add diced chicken and cook until browned.
- In a bowl, mix peanut butter, soy sauce, honey, garlic, ginger, and lime juice.
- Pour the peanut sauce over the chicken.
- Simmer for 10 minutes until chicken is cooked through.
- Season with salt and pepper.
- Serve hot with rice or noodles.
Notes
- Adjust the sweetness with more or less honey.
- Serve with chopped cilantro for garnish.
- Can substitute chicken with tofu for a vegetarian option.
