Description

Peach Fennel Slaw is a refreshing dish that combines the sweetness of ripe peaches with the unique flavor of fennel, complemented by crunchy red cabbage and carrots, and brightened with fresh mint.

Ingredients

Scale
  • 2 ripe peaches
  • 1 small bulb of fennel
  • 2 cups red cabbage
  • 1 large carrot
  • 1/4 cup fresh mint leaves
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the fennel by removing the fronds and slicing the bulb thinly.
  2. Pit and slice the peaches thinly.
  3. Mix the dressing by whisking together lime juice, honey, olive oil, salt, and pepper.
  4. In a large bowl, combine the sliced peaches, fennel, red cabbage, grated carrot, and mint leaves.
  5. Pour the dressing over the slaw mixture and toss gently. Let it sit for 15-20 minutes or refrigerate for a cooler dish.

Notes

  • Choose ripe, firm, and fragrant peaches for the best flavor.
  • Soak fennel slices in cold water for 10 minutes if the flavor is too strong.
  • Consider adding other fruits like nectarines or apples for variation.
  • Incorporate nuts or seeds for extra crunch and nutrition.
