Description

Peach Bellini Cupcakes are a delightful treat inspired by the classic cocktail. They have a light peach flavor and a bubbly champagne frosting.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 cup peach puree
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup champagne

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until creamy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in peach puree and milk.
  6. Gradually add dry ingredients to wet ingredients.
  7. Fill cupcake liners with batter and bake for 18-20 minutes.
  8. Let cupcakes cool completely.
  9. For frosting, beat butter and sugar, then add champagne until smooth.
