- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- ½ teaspoon ground cinnamon (optional)
- ¼ cup almond slivers
- 1 egg, beaten (for egg wash)
- 1 tablespoon coarse sugar (for sprinkling)
Instructions
- Prepare the dough by mixing flour, salt, and sugar, then incorporate chilled butter until crumbly.
- Add ice water gradually until the dough comes together, then form into a disk and refrigerate for at least one hour.
- Make the almond filling by mixing almond slivers with sugar and set aside.
- Prepare the peaches by slicing and mixing with sugar, cornstarch, vanilla, lemon juice, and cinnamon.
- Roll out the chilled dough into a rough circle, place on a baking sheet, and add the peach filling.
- Fold the edges of the dough over the filling and sprinkle with the almond mixture.
- Brush the crust with egg wash, sprinkle with coarse sugar, and bake at 400°F (200°C) for 30-35 minutes.
- Allow to cool for 10-15 minutes before serving.
