  • ½ cup unsalted butter, chilled and cut into small cubes
  • 46 tablespoons ice water
  • 34 ripe peaches, sliced (about 4 cups)
  • ¼ cup granulated sugar (adjust based on peach sweetness)
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • ½ teaspoon ground cinnamon (optional)
  • ¼ cup almond slivers
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. Prepare the dough by mixing flour, salt, and sugar, then incorporate chilled butter until crumbly.
  2. Add ice water gradually until the dough comes together, then form into a disk and refrigerate for at least one hour.
  3. Make the almond filling by mixing almond slivers with sugar and set aside.
  4. Prepare the peaches by slicing and mixing with sugar, cornstarch, vanilla, lemon juice, and cinnamon.
  5. Roll out the chilled dough into a rough circle, place on a baking sheet, and add the peach filling.
  6. Fold the edges of the dough over the filling and sprinkle with the almond mixture.
  7. Brush the crust with egg wash, sprinkle with coarse sugar, and bake at 400°F (200°C) for 30-35 minutes.
  8. Allow to cool for 10-15 minutes before serving.
