Description

Crispy roasted potatoes seasoned with Parmesan and herbs.


Ingredients

  • 2 pounds baby potatoes
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, mix olive oil, Parmesan, rosemary, thyme, garlic, salt, and pepper.
  4. Add the potatoes to the bowl and toss until well coated.
  5. Spread the potatoes on a baking sheet in a single layer.
  6. Roast for 25-30 minutes or until golden brown and crispy.
