Crispy roasted potatoes seasoned with Parmesan and herbs.
Ingredients

- 2 pounds baby potatoes
- 1/4 cup olive oil
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 4 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, mix olive oil, Parmesan, rosemary, thyme, garlic, salt, and pepper.
- Add the potatoes to the bowl and toss until well coated.
- Spread the potatoes on a baking sheet in a single layer.
- Roast for 25-30 minutes or until golden brown and crispy.
- Serve hot and enjoy!
Notes
- For extra crispiness, leave the potatoes unpeeled.
- Try different herbs for variety.
- Store leftovers in an airtight container in the refrigerator.
