Description

Oven baked spinach tacos are a healthy and delicious dish. They combine fresh spinach, cheese, and spices in a crispy taco shell.


Ingredients

  • 2 cups fresh spinach, chopped

  • 1/2 cup black beans, rinsed and drained

  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the spinach, cheese, black beans, cumin, chili powder, salt, and pepper.
  3. Drizzle the olive oil over the mixture and stir well.
  4. Fill each taco shell with the spinach mixture.
