Oven baked spinach tacos are a healthy and delicious dish. They combine fresh spinach, cheese, and spices in a crispy taco shell.

- 8 taco shells
- 2 cups fresh spinach, chopped
- 1 cup shredded cheese
- 1/2 cup black beans, rinsed and drained
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the spinach, cheese, black beans, cumin, chili powder, salt, and pepper.
- Drizzle the olive oil over the mixture and stir well.
- Fill each taco shell with the spinach mixture.
- Place the filled taco shells on a baking sheet.
- Bake in the preheated oven for 15-20 minutes or until the shells are crispy.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- You can add other vegetables like bell peppers or onions.
- Serve with salsa or sour cream.
- Store leftovers in an airtight container.
