Ingredients

- 1 cup orzo
- 2 cups vegetable broth
- 1 cup mushrooms, sliced
- 2 cups fresh spinach
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add garlic and sauté until fragrant.
- Add mushrooms and cook until tender.
- Stir in orzo and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 10-12 minutes.
- Add spinach and cook until wilted.
- Season with salt and pepper.
