Description

Ingredients

  • 300 grams (10.5 oz) spiral pasta (Fusilli or rotini)
  • 500 grams (1 lb) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 200 grams (7 oz) sun-dried tomatoes, chopped
  • 150 grams (5 oz) fresh spinach
  • 400 ml (1.7 cups) chicken broth
  • 240 ml (1 cup) heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 50 grams (1.75 oz) grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Prepare the chicken by cutting it into bite-sized pieces and sautéing in olive oil until browned and cooked through.
  2. Sauté minced garlic in the same pot for about 30 seconds, then add chopped sun-dried tomatoes and cook for another 2 minutes.
  3. Add spiral pasta, chicken broth, and heavy cream to the pot, stir well, and bring to a gentle boil. Reduce heat, cover, and simmer for 10-12 minutes.
  4. Add fresh spinach and cooked chicken back into the pot, stirring gently until the spinach wilts.
  5. Stir in grated Parmesan cheese, adjust seasoning, and serve garnished with extra cheese and fresh basil leaves.
