- 500 grams (1 lb) boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 200 grams (7 oz) sun-dried tomatoes, chopped
- 150 grams (5 oz) fresh spinach
- 400 ml (1.7 cups) chicken broth
- 240 ml (1 cup) heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 50 grams (1.75 oz) grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Prepare the chicken by cutting it into bite-sized pieces and sautéing in olive oil until browned and cooked through.
- Sauté minced garlic in the same pot for about 30 seconds, then add chopped sun-dried tomatoes and cook for another 2 minutes.
- Add spiral pasta, chicken broth, and heavy cream to the pot, stir well, and bring to a gentle boil. Reduce heat, cover, and simmer for 10-12 minutes.
- Add fresh spinach and cooked chicken back into the pot, stirring gently until the spinach wilts.
- Stir in grated Parmesan cheese, adjust seasoning, and serve garnished with extra cheese and fresh basil leaves.
