Description

A simple and flavorful one pot smoked sausage pasta dish.


Ingredients

  • 8 oz pasta
  • 12 oz smoked sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 1 tsp Italian seasoning
  • Salt to taste
  • Pepper to taste
  • 2 cups spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, sauté onion, garlic, and bell pepper until soft.
  2. Add sliced smoked sausage and cook until browned.
  3. Stir in diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  4. Add pasta and bring to a boil.
  5. Reduce heat and simmer until pasta is cooked.
  6. Mix in spinach and cook until wilted.
  7. Stir in Parmesan cheese before serving.
