Ingredients

- 1 cup orzo pasta
- 2 cups vegetable broth
- 1 cup diced tomatoes
- 1 cup spinach
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add garlic and sauté until fragrant.
- Stir in orzo and toast for 1-2 minutes.
- Add vegetable broth, diced tomatoes, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and simmer.
- Cook for 10-12 minutes, stirring occasionally.
- Add spinach and cook until wilted.
- Serve warm.

- Can add protein like chicken or shrimp if desired.
- Store leftovers in an airtight container.
- Reheat on the stove with a splash of broth.
