A comforting one pot meal combining gnocchi and chicken with a creamy sauce.
Ingredients

- 1 pound chicken fillet, diced
- 1 package (16 oz) gnocchi
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup frozen mixed vegetables
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and cook until browned.
- Add onion and garlic; sauté until onion is translucent.
- Stir in frozen vegetables, thyme, salt, and pepper.
- Pour in chicken broth and heavy cream; bring to a simmer.
- Add gnocchi and cook until they float to the surface.
- Serve warm.
Notes
- Customize with your favorite vegetables.
- For a lighter version, use half-and-half instead of heavy cream.
