Description

A hearty and creamy one pot corn potato chowder.


Ingredients

  • 4 cups of corn kernels
  • 2 large potatoes, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Add diced potatoes and corn, stir well.
  4. Pour in vegetable broth, bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Stir in heavy cream, season with salt and pepper.
  7. Simmer for an additional 5 minutes.
  8. Garnish with fresh parsley before serving.
