A simple and flavorful one pot chicken orzo dish.
Ingredients

- 1 lb chicken breast, diced
- 1 cup orzo pasta
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 4 cups chicken broth
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and cook until browned.
- Add onion, garlic, and bell pepper. Sauté until softened.
- Stir in orzo, chicken broth, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Fluff orzo with a fork and garnish with parsley before serving.
Notes
- Adjust seasoning to your taste.
- Can substitute chicken with shrimp or vegetables.
- Leftovers can be stored in the refrigerator for up to 3 days.
