Description

A comforting one pot chicken dumpling soup perfect for cold days.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, diced
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup milk
  • 2 tbsp butter, melted
  • 1 tsp thyme
  • 1 tsp parsley

Instructions

  1. In a large pot, combine chicken, carrots, celery, onion, chicken broth, and water. Bring to a boil.
  2. Reduce heat and simmer for 20 minutes.
  3. In a bowl, mix flour, baking powder, and salt.
  4. Add milk and melted butter to the flour mixture. Stir until combined.
  5. Drop spoonfuls of the dumpling mixture into the simmering soup.
  6. Cover and cook for an additional 15 minutes until dumplings are cooked through.
  7. Season with thyme and parsley. Stir and serve hot.

Notes

  • Adjust seasoning to taste.
  • For a thicker soup, add more flour to the dumpling mixture.
  • Can substitute chicken breast with thighs for more flavor.
