A comforting one pot chicken dumpling soup perfect for cold days.
Ingredients

- 1 lb chicken breast, diced
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 onion, diced
- 4 cups chicken broth
- 2 cups water
- 1 cup flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup milk
- 2 tbsp butter, melted
- 1 tsp thyme
- 1 tsp parsley
Instructions
- In a large pot, combine chicken, carrots, celery, onion, chicken broth, and water. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- In a bowl, mix flour, baking powder, and salt.
- Add milk and melted butter to the flour mixture. Stir until combined.
- Drop spoonfuls of the dumpling mixture into the simmering soup.
- Cover and cook for an additional 15 minutes until dumplings are cooked through.
- Season with thyme and parsley. Stir and serve hot.
Notes
- Adjust seasoning to taste.
- For a thicker soup, add more flour to the dumpling mixture.
- Can substitute chicken breast with thighs for more flavor.
