Description

One-Pot Buffalo Ranch Chicken Pasta is a quick and delicious meal that combines the bold flavors of buffalo sauce with the creamy goodness of ranch dressing, all cooked in one pot for easy preparation and cleanup.

Ingredients

Scale
  • 250 grams penne pasta (about 2 cups)
  • 450 grams chicken breast, diced (about 1 pound)
  • 240 milliliters buffalo sauce (about 1 cup)
  • 1 packet (about 30 grams) ranch seasoning mix
  • 225 grams cream cheese, cubed (about 8 ounces)
  • 200 grams shredded cheddar cheese (about 2 cups)
  • 500 milliliters chicken broth (about 2 cups)
  • 3 green onions, sliced (for garnish)
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for cooking)

Instructions

  1. Gather all your ingredients to ensure a smooth cooking process.
  2. In a large pot or Dutch oven, heat the olive oil over medium heat and add the diced chicken breast. Season with salt and pepper and cook for about 5-7 minutes until browned and fully cooked.
  3. Add the penne pasta, chicken broth, and buffalo sauce to the pot, stirring to combine. Bring the mixture to a gentle boil.
  4. Reduce the heat to low, cover the pot, and let it simmer for about 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
  5. Add the cubed cream cheese and stir until melted and blended into the sauce. Then, sprinkle the shredded cheddar cheese over the top and stir until melted. Garnish with sliced green onions and serve warm.

Notes

  • Overcooking the chicken can make it dry, so be careful not to overcook it.
  • Stir the pasta mixture occasionally to prevent sticking.
  • Ensure the right liquid ratio for optimal cooking.
  • Do not skip the cream cheese for a creamy sauce.
  • Taste and adjust seasoning before serving.
