Ingredients

  • Ground beef: 1 lb (450 g)
  • Pasta: 8 oz (225 g) of penne or rotini
  • Taco seasoning: 1 packet (about 1 oz or 28 g)
  • Diced tomatoes: 1 can (14.5 oz or 410 g)
  • Black beans: 1 can (15 oz or 425 g), drained and rinsed
  • Corn: 1 cup (fresh, frozen, or canned)
  • Cheddar cheese: 1 cup (100 g), shredded
  • Onion: 1 medium, diced
  • Garlic: 3 cloves, minced
  • Olive oil: 1 tablespoon
  • Salt and pepper: to taste
  • Water or broth: 2 cups (480 ml)

Instructions

  1. Brown the ground beef in a large pot with olive oil, diced onion, and minced garlic.
  2. Add taco seasoning, diced tomatoes, black beans, and corn to the pot.
