Ingredients

- Pasta: 8 oz (225 g) of penne or rotini
- Taco seasoning: 1 packet (about 1 oz or 28 g)
- Diced tomatoes: 1 can (14.5 oz or 410 g)
- Black beans: 1 can (15 oz or 425 g), drained and rinsed
- Corn: 1 cup (fresh, frozen, or canned)
- Cheddar cheese: 1 cup (100 g), shredded
- Onion: 1 medium, diced
- Garlic: 3 cloves, minced
- Olive oil: 1 tablespoon
- Salt and pepper: to taste
- Water or broth: 2 cups (480 ml)
Instructions
- Brown the ground beef in a large pot with olive oil, diced onion, and minced garlic.
- Add taco seasoning, diced tomatoes, black beans, and corn to the pot.
- Pour in water or broth and bring the mixture to a boil.
