Description

Ingredients

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add rice, stirring for 2-3 minutes until lightly toasted.
  3. Pour in vegetable broth and add black beans, corn, diced tomatoes, and spices.
  4. Bring to a boil, then reduce heat to low and cover.
  5. Simmer for 20 minutes or until rice is cooked and liquid is absorbed.
  6. Fluff the rice with a fork and garnish with fresh cilantro.
