A simple and flavorful one pan Mexican rice dish.
Ingredients

- 1 cup long-grain rice
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt to taste
- 1 tablespoon olive oil
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pan over medium heat.
- Add rice, stirring for 2-3 minutes until lightly toasted.
- Pour in vegetable broth and add black beans, corn, diced tomatoes, and spices.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for 20 minutes or until rice is cooked and liquid is absorbed.
- Fluff the rice with a fork and garnish with fresh cilantro.
Notes
- Adjust spices to your taste.
- Can add bell peppers for extra flavor.
- Serve with avocado or lime wedges.
